Ingredients
- 1 cup sugar-free chocolate chips
- 1 tablespoon coconut oil or butter
- 1 cup roasted unsalted peanuts
- 1/2 teaspoon vanilla extract (optional)
- Pinch of sea salt (optional)
Instructions
- Melt the Chocolate
In a microwave-safe bowl, combine sugar-free chocolate chips and coconut oil. Microwave in 20-second intervals, stirring each time until smooth.
(Or melt using a double boiler.) - Add Peanuts
Stir in the roasted peanuts until fully coated in chocolate. - Form Clusters
Line a tray or plate with parchment paper. Drop spoonfuls of the mixture onto the parchment to form small clusters. - Chill
