Ingredients
- 3 to 3½ pounds beef chuck roast
- 2 packets (1 oz each) dry onion soup mix
- 2 large yellow onions, thinly sliced
- 2 cups beef broth (preferably low-sodium)
Instructions
- Prepare the onions
Peel and thinly slice the onions. Spread them evenly across the bottom of a 6-quart slow cooker to form a base. - Add the roast
Pat the chuck roast dry with paper towels. Place it directly on top of the sliced onions. - Season the meat
Sprinkle the dry onion soup mix evenly over the top and sides of the roast. Gently press it into the surface so it sticks. - Add the broth
Pour the beef broth around the sides of the roast, being careful not to rinse the seasoning off the top. - Cook low and slow
Cover the slow cooker with the lid. Cook on LOW for 8–10 hours, until the beef becomes extremely tender and pulls apart easily with a fork. - Shred the roast
Use two forks to gently pull the roast into large pieces in the slow cooker. Stir the onions and juices so the beef is coated in the rich gravy. - Serve
