Garlic Soup (Rich, Comforting, and Flavorful)
A hearty, aromatic soup perfect for chilly days.
Ingredients
- 50 peeled garlic cloves
- 2 large onions, diced
- 3 cups stale bread, diced
- 6 cups chicken broth
- 2 tablespoons olive oil
Instructions
1. Roast the Garlic (Optional but Recommended)
For a sweeter, more mellow flavor:
- Preheat the oven to 375°F (190°C).
- Spread the peeled garlic cloves on a baking sheet.
- Drizzle lightly with olive oil and roast for 20–25 minutes, until fragrant and golden.
(You can skip roasting if you prefer a stronger garlic taste.)
2. Sauté the Onions
- Heat 2 tablespoons of olive oil in a large pot over medium heat.
- Add the diced onions.
- Cook for 10–12 minutes, stirring occasionally until soft and lightly caramelized.
3. Add Garlic
- Add the roasted (or raw) garlic cloves into the pot.
- Sauté for 2–3 minutes, letting the flavors blend.
4. Add Bread & Broth
- Stir in the diced stale bread.
- Pour in 6 cups of chicken broth.
- Bring to a gentle boil, then reduce to a simmer.
5. Simmer
- Let the soup simmer for 20–25 minutes, until the bread is completely softened.
6. Blend the Soup
- Use an immersion blender to puree until smooth and creamy.
Or transfer carefully to a blender in batches.
7. Taste & Adjust
Season with:
- Salt
- Pepper
- Optional herbs (thyme, parsley, rosemary)
Serving Suggestions
- Top with croutons, fresh herbs, or a drizzle of olive oil.
- Serve with crusty bread for a cozy meal.
