Blueberry Cobbler Bars
Blueberry cobbler bars are a delicious treat! They combine the classic flavors of a blueberry cobbler with the convenience of a bar. Here’s a simple recipe to make them:
Ingredients:
For the crust and topping:
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup (1 stick) unsalted butter, cold and cubed
- 1 large egg
- 1 tsp vanilla extract
For the filling:
- 3 cups fresh or frozen blueberries
- ¼ cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- ½ tsp ground cinnamon (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C) and grease or line a 9×9-inch baking pan with parchment paper.
- Make the Crust and Topping:
- In a medium bowl, mix the flour, sugar, baking powder, and salt.
- Add the cold, cubed butter. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
- In a small bowl, whisk together the egg and vanilla extract. Add it to the flour mixture and stir until combined. The dough should come together in clumps.
- Press about ¾ of the dough into the bottom of the prepared pan to form the crust. Set the remaining dough aside for the topping.
- Prepare the Blueberry Filling:
- In a bowl, combine the blueberries, sugar, lemon juice, cornstarch, and cinnamon (if using). Stir gently to coat the blueberries evenly.
- Pour the blueberry mixture over the crust in the pan, spreading it out evenly.
- Add the Topping:
- Crumble the remaining dough over the blueberry filling, covering it as evenly as possible. It’s okay if some of the filling shows through.
- Bake:
- Bake in the preheated oven for 40–45 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
- Remove from the oven and let the cobbler bars cool in the pan for about 15 minutes. Then, cut into squares.
- Serve:
- Enjoy the cobbler bars warm or at room temperature. They’re perfect with a scoop of vanilla ice cream or a dollop of whipped cream.
Tips:
- If you’re using frozen blueberries, do not thaw them before baking.
