Blueberry Cobbler Bars

Blueberry Cobbler Bars

Blueberry cobbler bars are a delicious treat! They combine the classic flavors of a blueberry cobbler with the convenience of a bar. Here’s a simple recipe to make them:

Ingredients:

For the crust and topping:

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup (1 stick) unsalted butter, cold and cubed
  • 1 large egg
  • 1 tsp vanilla extract

For the filling:

  • 3 cups fresh or frozen blueberries
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • ½ tsp ground cinnamon (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and grease or line a 9×9-inch baking pan with parchment paper.
  2. Make the Crust and Topping:
    • In a medium bowl, mix the flour, sugar, baking powder, and salt.
    • Add the cold, cubed butter. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
    • In a small bowl, whisk together the egg and vanilla extract. Add it to the flour mixture and stir until combined. The dough should come together in clumps.
    • Press about ¾ of the dough into the bottom of the prepared pan to form the crust. Set the remaining dough aside for the topping.

  1. Prepare the Blueberry Filling:
    • In a bowl, combine the blueberries, sugar, lemon juice, cornstarch, and cinnamon (if using). Stir gently to coat the blueberries evenly.
    • Pour the blueberry mixture over the crust in the pan, spreading it out evenly.
  2. Add the Topping:
    • Crumble the remaining dough over the blueberry filling, covering it as evenly as possible. It’s okay if some of the filling shows through.
  3. Bake:
    • Bake in the preheated oven for 40–45 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
    • Remove from the oven and let the cobbler bars cool in the pan for about 15 minutes. Then, cut into squares.
  4. Serve:
    • Enjoy the cobbler bars warm or at room temperature. They’re perfect with a scoop of vanilla ice cream or a dollop of whipped cream.

Tips:

  • If you’re using frozen blueberries, do not thaw them before baking.
  • You can also add a little bit of lemon zest to the filling for extra brightness.
  • If you prefer a thicker filling, you can add a bit more cornstarch.

These blueberry cobbler bars are perfect for a summer dessert, or anytime you’re craving something fruity and sweet! Enjoy!
